This cult-star of the Grower Champagne scene is producing remarkable wines from his 3 hectares in Chamery on the north flank of La Montagne; fermentation and long elevage of the vins clairs in old barrels means these are complex, vinous Champagnes of the very highest order.
Champagne Perseval is an established name in the village of Chamery
Young Clément has begun a series of boutique bottlings, separate from his father’s range, which split the 1er cru hillside vineyard by altitude, and thus in turn by cepages. The top of the slope where the soil is thinnest and the vines sit close to the chalk, is planted with pure Chardonnay and is bottled as 1er Cru Blanc de Blancs. Further down the slope the soil become sandier and the two pinots join the Chardonnay to make the holy trinity of Champagne, this is bottled as Chamery 1er Cru. Below the sand lies an area of Clay which is perfect for Pinot Noir and is bottled solo in excelsis as 1er Cru Blanc de Noirs. The wines are incredibly pure and precise – more akin perhaps to great Burgundy than frivolous fizz.
